The La Marzocco Strada MP (Mechanical Paddle) uses a conical valve system to provide manual, progressive control over water flow and pressure, allowing for real-time pressure profiling. Baristas manipulate the paddle to adjust pressure from pre-infusion to full extraction (0–9+ bar), with the periscope gauge displaying live pressure.
- Positions: Moving the paddle to the right (default) closes the valve and stops the shot. Moving it progressively to the left increases pressure.
- Pre-Infusion: Initiate the shot by moving the paddle slightly to the left, allowing low-pressure water to enter the coffee puck. Many users prefer a "6 o'clock" position for gentle pre-infusion.
- Pressure Manipulation: Gradually move the paddle further left to increase pressure to the desired level (e.g., up to 9 bar) as the extraction progresses.
- Ending the Shot: Return the paddle to the far right to stop the flow of water.
- Performance Tracking: Use the individual periscope gauges for each group to monitor pressure and ensure consistency.
